I want to limit the number of decimal places that display on the check stub.

To change the number of decimals that display on the check, there is a tool available from Microsoft [PSTL]  that limits the decimal places printed for the Amount in Words to only two, even if the Currency ID is setup for more than two. Also to correct the currency fields, add the following line to the Dex.ini file:
